Seasons and Regions Restaurant





A very nice late lunch with my daughter, Megan. From 3 pm until 5:30 pm, these are items for only $2.95 on the July Cheap Food Menu.

Pepe's Bay Shrimp Tostada:
Fresh Oregon bay shrimp Shredded cabbage, Jalapeno jack & black beans on a crispy corn tortilla. Topped with chipotle sour cream.

Wine Poached Salmon & Spiced Beet Salad:
Fresh salmon poached with fresh dill, chives & white wine. Served chilled on mixed greens with fresh beets, red onion, tomato, croutons & fresh dill sauce.

Smoked Salmon Caesar Salad:
Crisp romaine tossed with garlic croutons, fresh grated parmesan, and topped with our own fresh house smoked salmon.

Home made jerky...



By popular request, I made another batch of beef jerky. Perfect for camping/hiking, watching the big game with friends or to snack on while having a tasty micro-brew.

Marinade:
2 lbs. London Broil sliced 1/8 in. thick
2 cups tariyaki sauce
1/4 cup Worchestershire sauce
1/4 cup brown sugar
1 tea. liquid smoke
1/2 tea. garlic powder
1 Tab. red pepper flake (optional)

Let it marinate for 1 day then put in dehydrator till done.

Deep dish pizza...






I mixed some riccota cheese with capers, basil, Italian parsley and sliced green onions. Using a creme brulee dish, I layered the riccota, pizza sauce, fresh mozzerella, red bell pepper and a few grinds of pepper in the whole wheat crust. Then baked it at 475 degrees for about 20 min.

Another Garden Update...






Tomatoes, veggies and herbs are looking good. I've got butternut squash, lemon cucumber, yellow zucchini, english cucumber, peppers, Japanese eggplant, pole beans and six different tomato plants going. AND.... mmmmm, blueberries. I have several different kinds of basil... licorice basil is wonderful. Also, sage and tarragon, tyme, chives, Italian parsley, cilantro, and a huge rosemary bush. Oh, and some fennel (the kind that produce seeds, not bulbs) that came back from last year. The tomatoes are in hydroponic tubs that ensure the always have enough water.

Time for meat...


As much as I've been trying to step away from meat, sometimes you just have to do what you're going to do with gusto... In this case, a perfectly cooked rib eye. And, although meat is not your thing, thank you Erin for the wonderful plate. Twelve years ago??? It will always be my favorite plate!

Healthy Pasta




I saw a good deal on red and yellow bell peppers. Sauteed with onion and fresh zucchini, I added whole wheat pasta and just a bit of sauce. A nice handful of fresh basil and Parmesan cheese and it was a delicious dinner!

My daughter, Megan, and I enjoyed a nice lunch at Koreana Restaurant in Beaverton. The food was wonderful and the service was fast and friendly. It's kind of a "hole in the wall" and located between McCormick's Fish House and Portland Music Co. on Beaverton Hillsdale Hwy. And, don't park in Portland Music Co.'s parking lot or you will be towed.

Garden Update...






Had to post some of my favorite players in the flower garden. I'm really pleased with the lilies ... this is their second season and last year didn't give a single bloom.

The Best Multigrain Bread


This bread has a wonderful texture. Almost a crunchy chew... I think it's the millet.
INGREDIENTS:
3/4 cup skim milk
1 tablespoon olive oil
1 1/2 teaspoon salt
2 tablespoons sunflower seeds
1 tablespoon sesame seeds
1 tablespoon flax seeds
1 tablespoon millet
1 tablespoon quinoa
1 cup bread flour
1 cup whole wheat flour
1/4 cup packed brown sugar
2 1/4 teaspoon bread machine yeast
Put all this in a bread machine to mix (be sure to warm the milk). Then I let it rise in a bread pan while my oven pre-heated to 350 degrees and then baked for 30 minutes.

After all the BBQ and 4th of July festivities, it was nice to sit back and make a pizza with my daughter. We opted for a bell pepper and basil topping.
Our Perfect Crust
3 cups flour
2 1/4 tea. or 1 pkt. of yeast
1 tab. sugar
2 tea. salt
1 cup plus 1 tab. warm water
2 tab. olive oil
Combine dry ingredients. Mix in water, oil and knead to a ball. Cover and let rise for 1 hr. Cut to portion if making personal size pizza's.

When in Santa Cruz...




Another wonderful lunch while visiting my daughter in Santa Cruz was this Greek Feta vegetarian sandwich with a tapenade spread. DELICIOUS... This deli can get crowded but is worth the short wait. Fun people watching when sitting out front on a sunny day.

Andina Restaurant






Andina is a wonderful Peruvian spot in the Pearl District. It is a wonderful place for tapas and has a cozy bar area with a fireplace for those cold rainy days. It is reasonably priced and the menu is deep with a nice wine by the glass offering.
